Cauliflower Poppers

Ingredients

2 cups cauliflower, cut into small pieces (stalks & flowers), steamed

2 Tbsp. extra virgin olive oil

1/2 cup Mac-n-Mo’s Morselicious Mix

1 chia/flax egg totaling 3 Tbsp.

1 Tbsp. fresh or dried rosemary

Pinch of sea salt

1/2 cup fire-roasted or mild diced green chiles (BPA-free can or homemade)

2 Tbsp. nutritional yeast

Directions

1Preheat oven to 350 degrees.

2Steam the cauliflower and drain.

3Lightly grease a baking sheet.

4In a high-speed blender, pulse all ingredients into mashed potato-like consistency.

5Scoop Tbsp. sized balls of mixture (spray scoop with coconut oil)

6Place on prepared baking sheet.

7Bake for 20-25 minutes or until browned to desired crispiness
